FORMULATION
1/2 can of coconut milk
1 1/2 ounces of rum
1/2 lime juice
1 banana
1/2 ounce of triple sec
5ish ice cubes
PROCEDURE
Add everything to a blender and blend! I recommend doubling the recipe. I used ripe frozen bananas but you can use whatever you'd like, the sweeter the better. I also experimented with using light rum of Captain's Spiced Rum, see below for the final verdict..
RESULTS

Alrighty I'm giving this a 3/5 if you're using light rum, as you can see in the pictures below that was the first one I tried (because I kind of figured I'd like the Captain's version better). I think I'd like to try this with more banana less coconut. Something was off in this first round, recipe needs some work. I almost added another banana but that would have totaled 5 bananas for me in one day which I kind of thought about for a minute and decided that's too many.

Using Captain Morgan's Spiced Rum this drink gets a 4/5. I felt the spiced flavor toned down the coconut but I didn't really taste the rum at all. It was really interesting how all the flavors interacted. I want to try and make this again because it's a great way to get rid of my super ripe bananas and I really want to get down a good banana daiquiri. I'll need to do some more research, I had looked up about 3 guiding formulations but next time I'll do some tweaking. I'm open to suggestions so let me know what I should try!
So as you can see below I used canned coconut that I had kept in my fridge so it gets super creamy, I scooped a lot of the cream into the blender and got more of the liquidy milk part in as well and used about half a can. I cut up and peeled the bananas and squeezed in one lime. I didn't add any rum to the blender so that I could try out the two different versions. I post added the light rum into the glass where I poured out what turned out to be much less than half (lol) and just mixed it in. After that was done I added the Captain's to the blender and mixed. That one turned out much better than the first. All in all pretty creamy and refreshing, almost like dessert. I like the taste of coconut but something about using the coconut milk was kinda weird and overpowering. I'll figure it out..
DISCUSSION
I know that banana and coconut are pretty controversial flavors so you either love it or hate it. I did see some recipes that called for coconut rum, which I did not have, but some called for coconut milk so I used what I had at home. I always have so many leftover bananas that are slightly too ripe to eat plain and I think this was a great way to use them and that was my goal. Til next time.. cheers!
